Ingredients

6 slices thick-cut bacon

1 pound spicy Italian sausage

1 medium yellow onion, chopped

3 cloves garlic, minced

4 cups chicken broth

3 large russet potatoes, peeled and diced

3 cups chopped kale

1 cup heavy cream

Salt and pepper to taste


Instructions

1. In a large pot, cook chopped bacon over medium heat until crispy. Remove and set aside on a paper towel-lined plate.

2. Add Italian sausage to the pot and cook until browned, breaking it into crumbles. Remove and set aside with bacon.

3. In the remaining fat, sauté chopped onion until soft. Add minced garlic and cook for 30 seconds.

4. Pour in chicken broth and bring to a boil. Add diced potatoes and cook until fork tender, about 10-15 minutes.

5. Stir in chopped kale and cook until wilted, around 5 minutes.

6. Reduce heat and stir in heavy cream. Return sausage and most of the bacon to the pot. Heat through without boiling.

7. Serve hot, topped with crispy bacon and optional herbs.

Notes

Use russet potatoes for the best texture—they hold their shape but break down just enough to thicken the soup slightly.

Don’t skip browning the sausage; the crispy bits add so much flavor.

If your kale is tough, massage it briefly before adding to the soup to help it soften faster.
