Whether you’re looking for a quick breakfast treat or an elegant summer dessert, this easy recipe brings flavor and beauty together with minimal effort.

Ingredients

10 graham crackers, crushed

5 tablespoons unsalted butter, melted

1 cup fresh strawberries, pureed

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1/2 cup sour cream

1 teaspoon vanilla extract

1 and 1/2 cups all-purpose flour

1 and 1/2 teaspoons baking powder

1/4 teaspoon salt

4 ounces cream cheese, softened

1 cup heavy whipping cream

1/3 cup powdered sugar

1/2 teaspoon vanilla extract

1 cup fresh strawberries, halved (for topping)

Instructions

1. Crush graham crackers and mix with melted butter. Press into a greased 9×13-inch baking dish and chill.

2. Puree fresh strawberries until smooth.

3. Cream butter and sugar until fluffy. Add eggs one at a time.

4. Mix in strawberry puree, sour cream, and vanilla.

5. Whisk flour, baking powder, and salt. Add to wet mixture and mix until combined.

6. Pour batter over crust and bake at 350°F for 28-32 minutes. Let cool.

7. Beat cream cheese until smooth. Whip cream separately to soft peaks.

8. Fold whipped cream into cream cheese with powdered sugar and vanilla.

9. Spread frosting over cooled cake. Top with halved strawberries.

10. Chill for at least 1 hour before serving.

Notes

Make sure all ingredients are at room temperature for the best texture.

Use fresh strawberries for both the batter and topping for peak flavor.

Chill the cake before serving—it’s even better cold.
