Ingredients

14 oz extra-firm tofu, drained and crumbled

1 tablespoon olive oil

2 garlic cloves, minced

1 small onion, diced

1 teaspoon turmeric

2 tablespoons nutritional yeast

Salt and black pepper to taste

1 red bell pepper, diced

1 cup baby spinach

1 cup canned black beans, drained and rinsed

1/2 cup corn kernels

1 cup vegan shredded cheese

4 large flour tortillas

Optional chipotle mayo or avocado for serving


Instructions

1. Drain and pat dry the tofu, then crumble it into a bowl using your hands.

2. In a skillet, heat olive oil and sauté garlic and onion until softened.

3. Add crumbled tofu, turmeric, nutritional yeast, salt, and pepper. Cook until yellow and heated through.
