Ingredients
3 to 4 pounds beef chuck roast
2 tablespoons olive oil
1 tablespoon flour
1 teaspoon salt
1/2 teaspoon black pepper
1 large yellow onion, sliced
4 cloves garlic, minced
4 carrots, peeled and chopped
1 pound baby potatoes
2 tablespoons tomato paste
1 cup red wine
2 cups low-sodium beef broth
3 sprigs fresh thyme
2 bay leaves
Instructions
1. Pat beef dry, season with salt and pepper, and dust with flour.
2. Heat olive oil in a Dutch oven and sear the roast on all sides until deeply browned. Remove and set aside.
3. In the same pot, sauté onions and carrots until softened. Add garlic and tomato paste, cooking for 1 more minute.
4. Pour in red wine to deglaze the pot, scraping up all the browned bits.
5. Return the roast to the pot. Add potatoes, thyme, bay leaves, and enough broth to come halfway up the roast.
6. Cover and transfer to a 300°F oven. Braise for 3.5 to 4 hours until fork-tender.
7. Remove meat and vegetables. Skim fat and simmer sauce to thicken if needed.
8. Let the roast rest 10 minutes before slicing or shredding. Serve with veggies and ladle gravy over top.
