Description

Ultimate Cowboy Caviar Dip is a fresh, colorful, easy recipe packed with black beans, corn, tomatoes, peppers, avocado, and a zesty lime dressing. Ingredients

2 cups black beans, rinsed and drained

1 1/2 cups black eyed peas, rinsed and drained

1 1/2 cups sweet corn, drained

1 1/2 cups Roma tomatoes, diced

1 cup red bell pepper, diced

1 cup yellow or orange bell pepper, diced

1/2 cup red onion, finely diced

1 jalapeño, seeded and finely diced

1 large avocado, diced

1/3 cup fresh cilantro, chopped

1/4 cup fresh lime juice

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon chili powder

1/2 teaspoon ground cumin

3/4 teaspoon salt

1/4 teaspoon black pepper

Tortilla chips, for serving


Instructions

1. Rinse and drain the black beans and black eyed peas well, then add them to a large mixing bowl.

2. Add the corn, diced tomatoes, red bell pepper, yellow or orange bell pepper, red onion, jalapeño, and cilantro to the bowl.

3. In a small bowl, whisk together lime juice, olive oil, red wine vinegar, honey, garlic, chili powder, cumin, salt, and black pepper.

4. Pour the dressing over the bean and vegetable mixture, then gently toss until everything is evenly coated.

5. Cover and refrigerate for at least 30 minutes so the flavors can blend.

6. Just before serving, gently fold in the diced avocado.

7. Taste and adjust with extra lime juice or salt if needed, then serve chilled with tortilla chips.

Notes

Add the avocado right before serving so it stays fresh, creamy, and green.

Drain the beans and corn very well to keep the dip from becoming watery.

For a spicier dip, leave some jalapeño seeds in or add a pinch of cayenne pepper.
