Ingredients
1 tablespoon olive oil
1 medium onion, diced
3 garlic cloves, minced
1 pound ground turkey
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) fire-roasted diced tomatoes
1 cup frozen corn
3 cups chicken broth
Salt and pepper to taste
Optional toppings: shredded cheese, diced avocado, sour cream, crushed tortilla chips
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until soft and fragrant.
2. Add the ground turkey and cook until browned, breaking it up with a spoon.
