Ingredients
3 cups cooked turkey, chopped
12 ounces pasta (rotini or penne)
4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups chicken broth
1 1/2 cups milk
2 cups shredded cheddar cheese
1 cup frozen peas and carrots
1/2 cup sour cream
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup breadcrumbs
2 tablespoons melted butter (for topping)
1/4 cup grated Parmesan cheese
Instructions
1. Boil a large pot of salted water and cook the pasta until just al dente. Drain and set aside.
2. In a large skillet, melt 4 tablespoons of butter over medium heat. Whisk in the flour and cook for 1 minute.
3. Gradually whisk in the chicken broth and milk. Simmer for 3–4 minutes until thickened.
4. Stir in cheddar cheese, sour cream, salt, pepper, and garlic powder. Mix until melted and smooth.
5. Fold in the peas and carrots.
6. In a large mixing bowl, combine cooked pasta, chopped turkey, and sauce. Toss to coat.
7. Transfer mixture into a greased 9×13-inch baking dish.
8. In a separate bowl, mix breadcrumbs with melted butter and Parmesan. Sprinkle over the top.
9. Bake uncovered at 375°F for 25–30 minutes, until bubbling and golden brown.
10. Let rest for 5 minutes before serving.
Notes
Make sure the pasta is just al dente to avoid overcooking in the oven.
You can swap turkey with cooked chicken.
For extra golden crunch, broil the top for the last 2 minutes of baking.
