Ingredients

100g dark chocolate

100g milk chocolate

100g white chocolate

1 1/2 cups heavy cream, divided

3 tablespoons milk, divided

3 teaspoons unflavored gelatin powder, divided

3 tablespoons cold water, divided

1/2 teaspoon vanilla extract

1 teaspoon granulated sugar (optional)


Instructions

1. Melt 100g dark chocolate with 1 tablespoon milk over a double boiler.

2. In a small bowl, bloom 1 teaspoon gelatin in 1 tablespoon cold water for 5 minutes.

3. Warm the gelatin until fully dissolved, then mix it into the melted dark chocolate.

4. Let cool slightly, then fold in 1/2 cup whipped cream until fully combined.

5. Divide the dark chocolate mousse into 6 small glasses. Chill for 30 minutes.

6. Repeat the process for the milk chocolate layer using 100g milk chocolate, 1 tablespoon milk, 1 teaspoon gelatin, 1 tablespoon cold water, and 1/2 cup whipped cream.

7. Gently spoon milk chocolate mousse over the set dark chocolate layer. Chill again for 30 minutes.

8. For the white chocolate mousse, melt 100g white chocolate with 1 tablespoon milk.

9. Bloom and dissolve 1 teaspoon gelatin in 1 tablespoon cold water. Stir into white chocolate.

10. Fold in 1/2 cup whipped cream and 1/2 teaspoon vanilla extract. Add 1 teaspoon sugar if needed.

11. Spoon or pipe the white chocolate mousse on top. Chill for at least 2 hours.

12. Garnish with chocolate curls, shavings, or cocoa powder before serving.

Notes

Make sure the chocolate cools slightly before folding in the cream to avoid melting it.
