Ingredients

2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

1 cup granulated sugar

1 cup brown sugar

2 large eggs

1 cup buttermilk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup hot coffee

6 ounces semi-sweet chocolate, melted

1 cup unsalted butter, softened

3 1/2 cups powdered sugar

1/2 cup unsweetened cocoa powder

4 ounces semi-sweet chocolate, melted and cooled

1/3 cup heavy cream

1 teaspoon vanilla extract

1 cup mini chocolate chips

Instructions

1. Preheat the oven to 350°F and grease two 9-inch round cake pans. Line the bottoms with parchment paper.

2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, granulated sugar, and brown sugar.

3. In another bowl, whisk the eggs, buttermilk, vegetable oil, and vanilla extract until smooth.

4. Pour the wet ingredients into the dry ingredients and mix until mostly combined.

5. Stir in the melted chocolate, then slowly pour in the hot coffee and mix until the batter is smooth. The batter will be thin.

6. Divide the batter evenly between the prepared pans.

7. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

8. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

9. To make the frosting, beat the butter until creamy.

10. Add the powdered sugar, cocoa powder, melted chocolate, heavy cream, and vanilla extract. Beat until fluffy and smooth.

11. Level the cake layers if needed, then place one layer on a cake stand or plate.

12. Spread frosting over the first layer, add the second layer, and frost the top and sides.

13. Press mini chocolate chips over the top and around the sides if desired.

14. Chill the cake for 20 minutes for cleaner slices, then serve at room temperature.

Notes

Use room temperature eggs and buttermilk so the batter mixes smoothly and bakes evenly.

Do not skip the hot coffee because it deepens the chocolate flavor without making the cake taste like coffee.

Cool the cake layers completely before frosting so the chocolate buttercream stays thick and easy to spread.
