This ultimate stuffed beef burrito is a weeknight dinner winner—easy, satisfying, and packed with bold Tex-Mex flavors. Toasted to golden perfection, it’s one of my favorite easy recipes when I need something comforting yet structured. Great for meal prep, healthy snack alternatives (yes, you can tweak them), or even casual dinner parties.


Ingredients

1 lb ground beef (85/15)

2 tablespoons taco seasoning

2 cups cooked white rice

1 can black beans, rinsed and drained

1 1/2 cups shredded cheddar cheese

4 large flour tortillas

2 tablespoons chopped fresh cilantro

1 tablespoon lime juice

1 tablespoon butter

1/4 teaspoon garlic powder

Salt to taste


Instructions

1. In a skillet over medium heat, cook the ground beef until no longer pink. Drain excess fat. Add taco seasoning and a splash of water, then simmer until thickened.

2. Warm the cooked rice and stir in butter, lime juice, and cilantro.

3. Heat the black beans with garlic powder and a pinch of salt. Mash slightly for a creamier texture if preferred.

4. Lay out a flour tortilla and layer rice, beans, beef, and cheese. Be careful not to overfill.

5. Fold in the sides and roll tightly into a burrito.

6. Place the burrito seam-side down in a dry skillet. Toast on medium heat until both sides are golden brown and crispy.

7. Serve warm with extra lime, salsa, or sour cream if desired.

Notes

Use freshly shredded cheese for better melting.

Warming the tortilla before rolling helps prevent tearing.

Don’t skip toasting—it seals the burrito and enhances texture.
