Ingredients

1 lb cheese tortellini (refrigerated)

1 lb boneless chicken breast, diced

1 tablespoon olive oil

1 tablespoon butter

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 cups Alfredo sauce (store-bought or homemade)

1 tablespoon Cajun seasoning

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/3 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Instructions

1. Season chicken with Cajun seasoning, salt, and pepper. Heat olive oil and butter in a skillet, then sear the chicken until golden and cooked through. Remove and set aside.

2. Add bell peppers to the same skillet. Sauté until softened but still bright, about 3-4 minutes.

3. Pour Alfredo sauce into skillet. Stir in garlic powder, onion powder, and more Cajun seasoning. Let simmer 3-4 minutes.

4. Cook tortellini according to package instructions, then add to the sauce.

5. Return chicken to the skillet and stir in Parmesan until melted and glossy.

6. Garnish with fresh parsley and serve hot.

Notes

Use refrigerated tortellini for best texture; frozen can become too soft in sauce.

Add a splash of milk when reheating to bring the sauce back to life.

Adjust Cajun seasoning to taste — some brands are saltier or spicier than others.
