Ingredients
4 cups French bread cubes (dried)
4 tablespoons unsalted butter
1 medium yellow onion, diced
2 stalks celery, diced
2 cloves fresh garlic, minced
3 tablespoons fresh parsley, chopped
2 large eggs
3/4 cup low-sodium chicken broth
1 teaspoon dried sage
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
olive oil spray or cooking spray
Instructions
1. Cube your French bread and spread it on a baking sheet. Toast in a 300°F oven for 20–25 minutes until golden and crisp. Let cool completely.
2. In a large skillet, melt the butter over medium heat. Add the onion and celery and cook until softened, about 6–8 minutes. Stir in garlic and cook for 1 more minute. Remove from heat.
3. In a large bowl, combine the toasted bread cubes, sautéed vegetables, chopped parsley, sage, thyme, salt, and pepper. Whisk eggs and chicken broth together, then pour over the mixture. Gently toss until all cubes are moistened.
4. Preheat oven to 375°F. Line a baking sheet with parchment paper. Let the mixture sit for 10 minutes to absorb liquid. Scoop out about 1/3 cup and form into balls using your hands. Place on the sheet and spray lightly with olive oil spray.
5. Bake for 25–30 minutes, until the balls are golden and slightly crisp on the outside. Serve warm!
Notes
Make sure your bread cubes are completely dried out for best texture.
Letting the mixture rest helps it hold shape when forming.
You can freeze the baked balls and reheat straight from frozen.
