Description

These Thai Drunken Noodles are your go-to for a spicy, bold, and satisfying meal that’s ready in under 30 minutes. It’s a quick dinner idea packed with chewy rice noodles, Thai basil, and a savory-sweet sauce that clings to every bite. Perfect for weeknight meals, Asian-inspired food cravings, or easy recipe lovers looking to add a little fire to their dinner ideas.

Ingredients

8 oz wide rice noodles

2 tablespoons vegetable oil

4 cloves garlic, minced

2 Thai chilies, sliced

1 lb boneless chicken thighs, thinly sliced

1/2 onion, sliced

1 red bell pepper, sliced

1/2 yellow bell pepper, sliced

1 cup Thai basil leaves

2 tablespoons soy sauce

1 tablespoon dark soy sauce

1 tablespoon oyster sauce

1 teaspoon fish sauce

1 teaspoon sugar

Instructions

1. Soak the rice noodles in warm water until just pliable, then drain and set aside.

2. Mix the soy sauce, dark soy sauce, oyster sauce, fish sauce, and sugar in a bowl.

3. Heat oil in a wok or large skillet over high heat. Add garlic and chilies; stir-fry for 30 seconds.

4. Add chicken and stir-fry until fully cooked and lightly browned.

5. Add onions and bell peppers; stir-fry until crisp-tender with some char.

6. Add the noodles and pour the sauce over. Toss until everything is well coated and heated through.

7. Remove from heat and immediately add Thai basil. Toss until wilted.

8. Serve hot with optional toppings like a fried egg or crushed peanuts.

Notes

Use Thai basil—not Italian basil—for authentic flavor.

Don’t over-soak the noodles; they’ll finish cooking in the pan.

High heat is key for that smoky, wok-fried flavor.
