Ingredients

1 tablespoon oil

1 small onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons red curry paste

1.5 pounds boneless skinless chicken thighs, cut into chunks

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 carrots, sliced

1 can (13.5 oz) full-fat coconut milk

1 tablespoon fish sauce

1 lime, juiced

Fresh cilantro for garnish

Salt to taste

Cooked jasmine rice, for serving


Instructions

1. Heat oil in a large skillet or Dutch oven over medium heat. Add the diced onion and cook until softened.

2. Stir in garlic and ginger, cooking for 30 seconds until fragrant.

3. Add red curry paste and cook for 1–2 minutes to bloom the flavors.

4. Add the chicken pieces and stir to coat with the paste. Let them brown slightly.

5. Toss in the sliced bell peppers and carrots, stirring everything together.

6. Pour in the coconut milk, scraping up any bits stuck to the bottom. Bring to a simmer.

7. Simmer uncovered for 15–20 minutes until chicken is cooked through and sauce thickens.

8. Stir in fish sauce and lime juice. Taste and adjust seasoning with salt if needed.

9. Serve hot over jasmine rice and garnish with fresh cilantro.

Notes

Use full-fat coconut milk for the creamiest texture.

Don’t skip blooming the curry paste—it deepens the flavor.

Chicken thighs stay juicy and tender; avoid substituting with chicken breast.
