Ingredients

1 lb ground beef

1/2 cup breadcrumbs

1 large egg

2 cloves garlic, minced

1 tbsp fresh ginger, grated

2 green onions, finely sliced

2 tbsp soy sauce

1/4 tsp black pepper

1 tbsp neutral oil

1/3 cup soy sauce

1/4 cup water

3 tbsp brown sugar

2 tbsp honey

1 tbsp rice vinegar

1 tsp sesame oil

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tbsp cornstarch

1 tbsp water

1 tbsp sesame seeds

2 green onions, sliced


Instructions

1. Preheat the oven to 400°F and line a baking sheet or lightly grease a baking dish.

2. In a large bowl, combine the ground beef, breadcrumbs, egg, garlic, ginger, green onions, soy sauce, and black pepper. Mix just until combined.

3. Shape the mixture into meatballs, about 1 to 1 1/2 inches each, and place them on the prepared baking sheet.

4. Brush or lightly drizzle the meatballs with neutral oil to help them brown.

5. Bake for 16 to 18 minutes, or until the meatballs are cooked through and lightly golden.

6. While the meatballs bake, add soy sauce, water, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger to a small saucepan over medium heat.

7. In a small bowl, stir together the cornstarch and water until smooth, then pour it into the saucepan.

8. Simmer the sauce for 2 to 4 minutes, stirring often, until it thickens and turns glossy.

9. Add the cooked meatballs to the sauce and toss gently until fully coated.

10. Garnish with sesame seeds and green onions, then serve hot over rice, noodles, or vegetables.

Notes

Do not overmix the meatball mixture or the texture can turn dense instead of tender.

If the sauce thickens too much, add a small splash of water and stir until smooth again.

These meatballs reheat well, so they are great for meal prep lunches or quick dinners later in the week.
