Description
This taco soup is a cozy, flavor-packed easy dinner made with seasoned ground beef, beans, tomatoes, corn, and a rich taco-spiced broth. Ingredients
1 pound ground beef
1 medium yellow onion, diced
3 cloves garlic, minced
2 tablespoons taco seasoning
1 tablespoon ranch seasoning
1 can 14.5 ounces diced tomatoes
1 can 10 ounces diced tomatoes with green chiles
1 can 15 ounces black beans, drained and rinsed
1 can 15 ounces pinto beans, drained and rinsed
1 can 15 ounces kidney beans, drained and rinsed
1 can 15 ounces corn, drained
1 can 8 ounces tomato sauce
3 cups beef broth
1 tablespoon lime juice
2 tablespoons chopped fresh cilantro
1 cup shredded cheddar cheese, for serving
1/2 cup sour cream, for serving
1 avocado, diced, for serving
2 cups tortilla chips, for serving
Instructions
1. Add the ground beef to a large soup pot over medium heat and cook until browned, breaking it into small crumbles. Drain excess grease if needed.
2. Stir in the diced onion and cook for 3 to 4 minutes, until softened. Add the garlic and cook for 30 seconds.
3. Add the taco seasoning and ranch seasoning, then stir until the beef is well coated.
4. Pour in the diced tomatoes, tomatoes with green chiles, black beans, pinto beans, kidney beans, corn, tomato sauce, and beef broth.
5. Bring the soup to a gentle boil, then reduce the heat and simmer uncovered for 20 to 25 minutes, stirring occasionally.
6. Stir in the lime juice and cilantro. Taste and adjust seasoning if needed.
7. Ladle into bowls and serve hot with shredded cheese, sour cream, avocado, and tortilla chips.
Notes
For a thicker taco soup, simmer uncovered for a few extra minutes or mash a small portion of the beans into the broth.
For a lighter version, swap the ground beef with ground turkey or ground chicken.
Add toppings right before serving so the chips stay crunchy and the avocado stays fresh.
