Ingredients
3 tablespoons maple syrup

4 large carrots
2 apples

1 teaspoon salt

Instructions
1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
2. In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, and pepper.
3. Peel and slice carrots on the diagonal into 1/2-inch thick pieces. Core and slice apples into thick wedges.
4. Toss carrots and apples in the maple-Dijon mixture until well coated.
5. Spread evenly on the baking sheet in a single layer.
6. Roast for 30–35 minutes, stirring halfway through.
7. Sprinkle thyme over the top during the last 5 minutes of roasting.
