Ingredients
3 medium sweet potatoes, peeled and diced
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 medium onion, diced
1 pound pork sausage
8 large eggs
1 cup whole milk
1 1/2 cups shredded cheddar cheese
1 cup fresh spinach, chopped (optional)
Instructions
1. Preheat oven to 400°F. Line a baking sheet with parchment.
2. Toss diced sweet potatoes with olive oil, garlic powder, salt, and pepper. Roast for 25 minutes until tender.
3. While potatoes roast, heat a skillet over medium. Sauté onions in a bit of oil until soft, then add sausage. Cook until browned and crumbled.
4. In a large bowl, whisk together eggs and milk. Add a pinch of salt and pepper.
5. Grease a 9×13 casserole dish. Layer roasted sweet potatoes, sausage mixture, and spinach.
6. Pour egg mixture evenly over the top. Sprinkle cheddar cheese over everything.
7. Reduce oven to 375°F. Bake for 30–35 minutes or until the center is set and top is golden.
