Ingredients
2 pounds boneless skinless chicken thighs
1 cup pineapple chunks with juice
1 red bell pepper chopped
1/3 cup low sodium soy sauce
1/4 cup brown sugar
3 cloves garlic minced
2 tablespoons cornstarch
2 tablespoons water
Instructions
1. Optional: Sear the chicken thighs on both sides in a hot skillet until golden.
2. Place chicken in the crockpot along with pineapple chunks (and juice), red bell pepper, soy sauce, brown sugar, and garlic.
3. Stir gently to combine and coat everything.
4. Cover and cook on low for 5-6 hours or high for 3-4 hours.
5. Mix cornstarch and water in a small bowl until smooth.
6. Add cornstarch slurry to the crockpot about 15 minutes before serving.
7. Let the sauce cook uncovered to thicken.
8. Shred the chicken with two forks and stir to coat in sauce.
9. Serve over rice with green onions or sesame seeds if desired.
Notes
Use pineapple chunks with juice for the best flavor and sauce consistency.
Searing the chicken before slow cooking adds depth, but you can skip if short on time.
Leftovers taste even better the next day after the sauce thickens more.
