Description

Sweet and Creamy Lemon Bar Truffles are an easy no-bake dessert with buttery cookie crumbs, cream cheese, lemon curd, fresh lemon zest, and a smooth white chocolate coating. Ingredients

1 1/2 cups finely crushed shortbread cookies

4 ounces cream cheese, softened

1/3 cup lemon curd

1 tablespoon fresh lemon zest

1/4 cup powdered sugar

1/2 teaspoon vanilla extract

10 ounces white chocolate melting wafers or chopped white chocolate

1 teaspoon coconut oil or shortening

1 tablespoon crushed shortbread cookies for topping

1 teaspoon extra lemon zest for topping


Instructions

1. Crush the shortbread cookies into fine crumbs using a food processor or a sealed bag and rolling pin.

2. In a large bowl, mix the cookie crumbs, softened cream cheese, lemon curd, lemon zest, powdered sugar, and vanilla extract until a thick dough forms.

3. Cover and refrigerate the mixture for 30 minutes, or until firm enough to scoop.

4. Scoop the mixture into small portions and roll into about 24 truffles. Place them on a parchment-lined baking sheet.

5. Chill the rolled truffles for 20 minutes so they hold their shape before dipping.

6. Melt the white chocolate with coconut oil or shortening in short intervals, stirring until smooth.

7. Dip each chilled truffle into the melted coating, let the excess drip off, then place it back on the parchment.

8. Sprinkle with crushed shortbread cookies and extra lemon zest while the coating is still wet.

9. Refrigerate until the coating is set, then serve chilled or slightly cool.

Notes

Chill the filling before rolling so the truffles stay smooth and do not stick to your hands.

Use fresh lemon zest for the brightest lemon flavor. Lemon juice alone will not give the same aroma.

If the coating feels too thick, stir in a small amount of coconut oil or shortening until it becomes easier to dip.
