3 cups peeled and sliced peaches

2 tablespoons granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1/3 cup brown sugar


Instructions

1. Preheat the oven to 350°F and line an 8-inch square baking pan with parchment paper.

2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.

3. Cut in the cold butter until the mixture forms coarse crumbs.

4. Stir in the egg yolk and vanilla until the mixture holds together when pressed.

5. Reserve 3/4 cup of the crumb mixture for the topping, then press the rest firmly into the prepared pan.

6. In a separate bowl, toss the peaches with sugar, lemon juice, cornstarch, cinnamon, and nutmeg.

7. Spread the peach filling evenly over the crust.

8. Mix the reserved crumb mixture with brown sugar, then sprinkle it over the peach layer.

9. Bake for 38 to 42 minutes, or until the top is golden and the filling is bubbling at the edges.

10. Cool completely before slicing into bars. Chill before cutting for the cleanest squares.
