Ingredients
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 1/2 cups granulated sugar
3 large eggs
2 teaspoons vanilla extract
3/4 cup whole milk
1/2 cup sour cream
4 cups fresh strawberries, sliced
3 tablespoons granulated sugar, for strawberries
1 tablespoon lemon juice
8 ounces cream cheese, softened
1 cup powdered sugar
2 cups cold heavy whipping cream
1 teaspoon vanilla extract, for topping
Instructions
1. Preheat the oven to 350°F. Grease a 9×13-inch baking pan and line it with parchment paper if desired.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, beat the softened butter and granulated sugar until pale and fluffy.
4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
5. Beat in the sour cream until smooth. Add the dry ingredients in portions, alternating with the milk, and mix just until combined.
6. Spread the batter evenly into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.
7. Toss the sliced strawberries with sugar and lemon juice. Let them sit for 15 to 20 minutes until juicy.
8. Beat the cream cheese and powdered sugar until smooth. Add the cold heavy whipping cream and vanilla, then beat until thick, fluffy, and spreadable.
9. Spread the whipped cream frosting over the cooled cake. Spoon the strawberries over the top before serving, or chill the frosted cake and add berries later.
10. Slice and serve chilled for the best texture.
Notes
Make sure the cake is fully cooled before adding the whipped topping so it stays fluffy and smooth.
For the neatest presentation, add the strawberries shortly before serving.
The plain cake layer can be baked a day ahead, then frosted and topped before serving.
