Description

This Strawberry Eclair Cake is a cool, creamy, no-bake dessert that layers graham crackers, fluffy vanilla filling, fresh strawberries, and a glossy strawberry topping into an easy recipe everyone will want a second slice of. It is perfect for dessert ideas, summer food ideas, party treats, potluck sweets, holiday tables, and make-ahead no-bake cake recipes when you need something simple, pretty, and delicious.

Ingredients

2 sleeves graham crackers

2 boxes instant vanilla pudding mix, 3.4 ounces each

3 cups cold whole milk

1 container whipped topping, 8 ounces, thawed

8 ounces cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

3 cups fresh strawberries, sliced

1 cup strawberry glaze or strawberry topping

1/2 cup white chocolate chips or vanilla melting wafers

Instructions

1. Beat the softened cream cheese, powdered sugar, and vanilla extract in a large bowl until smooth and creamy.

2. In a separate bowl, whisk the instant vanilla pudding mix with cold milk until thickened.

3. Fold the pudding mixture into the cream cheese mixture until combined.

4. Gently fold in the whipped topping until the filling is light and smooth.

5. Arrange one layer of graham crackers in the bottom of a 9×13-inch dish, breaking pieces as needed to fit.

6. Spread half of the creamy filling over the graham crackers.

7. Add a layer of sliced strawberries over the filling.

8. Add a second layer of graham crackers, then spread the remaining filling over the top.

9. Add another layer of sliced strawberries if desired, then place a final layer of graham crackers on top.

10. Spread strawberry glaze or strawberry topping evenly over the top layer.

11. Melt the white chocolate chips or vanilla wafers, then drizzle over the strawberry topping.

12. Cover and refrigerate for at least 6 hours, preferably overnight, before slicing and serving cold.

Notes

Chill the cake overnight for the softest graham cracker layers and cleanest slices.

Use fresh strawberries when possible because frozen berries can release extra liquid into the filling.

Wipe the knife between slices for a cleaner presentation, especially if serving this cake for guests.
