Description

This Strawberry Crackle Salad is a quick dessert salad that brings together fresh strawberries, fluffy creaminess, and a buttery crunchy topping in one chilled bowl. It is an easy recipe for brunch, potlucks, holiday tables, summer parties, and sweet food ideas when you need a make-ahead treat that feels fun, fresh, and crowd-pleasing.

Ingredients

2 cups fresh strawberries, chopped

1 cup crushed pineapple, well drained

3 oz instant strawberry gelatin mix

3.4 oz instant vanilla pudding mix

1 cup sour cream

8 oz whipped topping, thawed

2 cups mini marshmallows

1 cup crushed graham crackers

1 cup crushed golden sandwich cookies

4 tbsp unsalted butter, melted

Instructions

1. Wash, hull, and chop the strawberries into bite-sized pieces. Drain the crushed pineapple very well so the salad stays thick and fluffy.

2. In a large mixing bowl, stir together the sour cream, strawberry gelatin mix, and vanilla pudding mix until smooth and fully combined.

3. Gently fold in the whipped topping until the mixture is light, creamy, and evenly pink.

4. Add the chopped strawberries, drained pineapple, and mini marshmallows. Fold everything together until evenly coated.

5. Cover the bowl and refrigerate for at least 1 hour so the salad can chill and set.

6. In a small bowl, combine the crushed graham crackers, crushed golden sandwich cookies, and melted butter until the crumbs are evenly coated.

7. Just before serving, sprinkle the crackle topping over the chilled salad and serve immediately.

Notes

Keep the topping separate until serving time so it stays crisp.

Drain the pineapple thoroughly to avoid a watery salad.

For the best texture, use fresh strawberries instead of frozen.
