Ingredients

1 ½ cups all-purpose flour

2 teaspoons baking powder

¼ teaspoon salt

1 tablespoon granulated sugar

2 large eggs

1 ¼ cups milk

4 tablespoons melted butter

1 teaspoon vanilla extract (for batter)

6 oz cream cheese, softened

3 tablespoons powdered sugar

½ teaspoon vanilla extract (for filling)

½ cup finely chopped fresh strawberries


Instructions

1. In a medium bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the chopped strawberries. Set aside.

2. In a large bowl, whisk together flour, baking powder, sugar, and salt.

3. In another bowl, whisk eggs, milk, melted butter, and vanilla extract.

4. Combine wet and dry ingredients, stirring until just mixed.

5. Preheat and grease your waffle maker.

6. Pour about ¼ cup of batter onto the waffle iron, spreading slightly.

7. Spoon 1 heaping tablespoon of cheesecake filling into the center.

8. Cover with about 2 tablespoons more batter.

9. Close and cook for 3–5 minutes or until golden and crisp.

10. Remove carefully and repeat with remaining batter and filling.

11. Serve warm with extra strawberries, whipped cream, or syrup if desired.

Notes

Make sure the cream cheese is fully softened before mixing for the smoothest filling.

Chop strawberries very small so they distribute evenly and don’t make the filling too watery.

Avoid overfilling the waffle maker to prevent batter from overflowing during cooking.
