1 teaspoon vanilla extract

8 ounces cream cheese, softened

1/2 cup powdered sugar

1 tablespoon lemon juice

1 teaspoon lemon zest

1 1/2 cups fresh strawberries, sliced

1/4 cup strawberry jam

1/3 cup graham cracker crumbs

1/2 cup whipped cream


Instructions

1. Beat the softened cream cheese, powdered sugar, vanilla, lemon juice, and lemon zest until smooth and creamy.

2. Stir the sliced strawberries with strawberry jam and let them sit while you make the pancakes.

3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

4. In another bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.

5. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.

6. Heat a lightly greased skillet or griddle over medium heat.

7. Pour about 1/4 cup batter for each pancake and cook until bubbles form on top and the edges look set.
