Ingredients
2 steaks (sirloin or ribeye), about 1 inch thick
1 bunch fresh parsley, finely chopped
3 garlic cloves, minced
1 teaspoon red pepper flakes
2 tablespoons red wine vinegar
1/3 cup extra virgin olive oil
1/2 teaspoon sea salt
4 cups arugula
1/2 red onion, thinly sliced
1 cup cherry tomatoes, halved
1/2 cucumber, diced
1 cup canned chickpeas, drained and rinsed
1/2 cup feta cheese, crumbled
Instructions
1. Make the chimichurri by mixing parsley, garlic, red pepper flakes, vinegar, olive oil, and salt in a bowl. Let sit while preparing the rest.
2. Pat steaks dry, season with salt and pepper, and sear in hot cast iron skillet for 3-4 minutes per side for medium rare.
3. Let the steaks rest 5 minutes before slicing against the grain.
4. In a large bowl, combine arugula, cherry tomatoes, cucumber, red onion, chickpeas, and feta.
5. Drizzle lightly with olive oil and vinegar if desired.
6. Place sliced steak over the salad and spoon chimichurri generously on top.
7. Serve immediately while steak is still warm.
