Ingredients
1 baguette, sliced
3 cups diced Roma tomatoes
2 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces fresh mozzarella, sliced
2 tablespoons balsamic glaze
Instructions
1. Preheat the oven to 400°F and line a baking sheet with parchment paper if desired.
2. Arrange the baguette slices on the baking sheet and lightly brush them with a little olive oil.
3. Toast the bread for 6 to 8 minutes, or until the edges are lightly golden and crisp.
4. In a medium bowl, combine the diced tomatoes, minced garlic, olive oil, chopped basil, salt, and black pepper.
5. Stir the tomato mixture well and let it sit for 10 minutes so the flavors can blend.
6. Use a small ghost-shaped cutter to cut the mozzarella slices into ghost shapes.
7. Spoon the tomato mixture onto each toasted bread slice, leaving excess liquid behind in the bowl.
8. Place one mozzarella ghost on top of each piece.
9. Drizzle lightly with balsamic glaze just before serving.
10. Serve immediately while the bread is crisp.
