Ingredients

1 cup unsalted butter, softened

1/2 cup granulated sugar

3/4 cup brown sugar

1/2 cup pumpkin puree

2 teaspoons vanilla extract

2 3/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon cream of tartar

1/2 teaspoon salt

1 1/2 teaspoons ground cinnamon

1/4 cup granulated sugar (for rolling)

1 tablespoon ground cinnamon (for rolling)


Instructions

1. Cream softened butter with granulated sugar and brown sugar until light and fluffy.

2. Add in pumpkin puree and vanilla extract, mixing until well combined.

3. In a separate bowl, whisk together flour, baking soda, cream of tartar, salt, and ground cinnamon.

4. Gradually mix dry ingredients into the wet ingredients until fully incorporated. Do not overmix.

5. Chill the dough for at least 30 minutes.

6. Mix rolling sugar and cinnamon in a small bowl. Scoop dough, roll into balls, and coat in cinnamon sugar.

7. Place on parchment-lined baking sheet and bake at 350°F for 10–12 minutes until edges are set and centers look slightly underdone.

8. Cool on baking sheet for a few minutes before transferring to a wire rack.

Notes

Use pure pumpkin puree, not pumpkin pie filling, for the right consistency and flavor.

Chilling the dough helps control spreading and enhances flavor.

Don’t overbake—cookies continue to cook slightly on the baking sheet after removal.
