Ingredients

1 cup unsalted butter, softened

3/4 cup granulated sugar

1/2 cup packed light brown sugar

1 large egg

2 teaspoons vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups sweetened shredded coconut

1/4 cup extra sweetened shredded coconut for topping, optional


Instructions

1. Preheat the oven to 350°F and line baking sheets with parchment paper.

2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and smooth.

3. Add the egg and vanilla extract, then mix until fully combined.

4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

5. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.

6. Fold in the shredded coconut until evenly distributed.

7. Scoop the dough into tablespoon-sized balls and place them on the prepared baking sheets, leaving space between each cookie.

8. Sprinkle a little extra coconut on top if desired.

9. Bake for 10 to 12 minutes, or until the edges are lightly golden and the centers still look soft.

10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use softened butter, not melted butter, for the best soft and buttery texture.

Do not overbake the cookies. Pull them from the oven when the edges are golden and the centers still look soft.

For extra coconut flavor, lightly toast part of the coconut and let it cool before folding it into the dough.
