Ingredients
1 pound ground beef
1 small yellow onion, finely diced
2 cloves garlic, minced
2 tablespoons taco seasoning
4 ounces diced green chiles
1 cup refried beans
1 cup cooked white rice
2 cups shredded Mexican cheese blend, divided
6 large flour tortillas
2 cups red enchilada sauce
1/2 cup beef broth
1/2 cup sour cream, for serving
2 tablespoons chopped fresh cilantro
2 tablespoons sliced green onions
1/2 cup diced tomatoes, optional
1 avocado, sliced, optional
1 jalapeño, sliced, optional
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish. Spread a thin layer of enchilada sauce over the bottom of the dish.
2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is softened. Drain excess grease if needed.
3. Stir in the minced garlic and cook for 30 seconds, just until fragrant.
4. Add the taco seasoning and diced green chiles. Stir well and cook for 1 to 2 minutes so the spices coat the beef.
5. Stir in the refried beans and cooked rice until the filling is creamy and evenly combined.
6. Remove the skillet from the heat and stir in 1 cup of shredded cheese.
7. Warm the tortillas slightly so they roll without tearing.
8. Spoon the beef filling down the center of each tortilla. Fold in the sides and roll tightly into burritos.
9. Place the burritos seam side down in the prepared baking dish.
10. Whisk together the enchilada sauce and beef broth, then pour it evenly over the burritos.
11. Sprinkle the remaining 1 cup of shredded cheese over the top.
12. Cover with foil and bake for 20 minutes. Remove the foil and bake for another 8 to 10 minutes, until the sauce is bubbling and the cheese is melted.
13. Let the burritos rest for 5 minutes, then serve with sour cream, cilantro, green onions, tomatoes, avocado, or jalapeños.
Notes
Warm the tortillas before rolling so they stay flexible and do not crack.
Do not overfill the burritos, or they may split while baking.
Add extra enchilada sauce before reheating leftovers to keep the burritos moist and saucy.
