Ingredients

2 tablespoons butter

1 small onion, finely chopped

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

2 tablespoons all-purpose flour

4 cups vegetable or chicken broth

3 medium Yukon Gold potatoes, peeled and diced

1 cup corn kernels (fresh or frozen)

1 cup heavy cream

6 ounces smoked salmon, flaked

2 tablespoons fresh dill, chopped

1 tablespoon lemon juice

Salt and black pepper to taste


Instructions

1. In a large pot, melt butter over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened, about 6-7 minutes.

2. Sprinkle flour over the vegetables and stir to coat. Cook 1-2 minutes to remove raw flour taste.

3. Gradually whisk in the broth to form a smooth base.

4. Add diced potatoes. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.

5. Stir in corn and heavy cream. Simmer uncovered for 5 minutes.

6. Add flaked smoked salmon, dill, and lemon juice. Simmer for 3 minutes more.

7. Season with salt and pepper to taste. Serve hot with crusty bread or crackers.

Notes

For a thicker chowder, mash a few potato chunks in the pot before serving.

Use hot-smoked salmon for a firmer, more textured bite.
