Description

This smoked salmon & poached egg avocado toast is a quick breakfast or easy brunch idea that’s healthy, protein-packed, and bursting with flavor. Creamy avocado, silky smoked salmon, and golden runny eggs come together on toasted sourdough with a sprinkle of furikake or everything seasoning. If you’re looking for breakfast ideas, food ideas, or a high-protein, easy recipe that looks gourmet but takes under 20 minutes—this one’s a keeper.

Ingredients

2 slices sourdough bread

1 ripe avocado

2 eggs

2 slices cold-smoked salmon

1 teaspoon lemon juice

Pinch of sea salt

1 teaspoon furikake or everything seasoning

Instructions

1. Toast the sourdough slices to golden and crispy.

2. Mash the avocado in a bowl with lemon juice and sea salt.

3. Poach the eggs by simmering water and gently dropping them in one by one; cook 3 minutes each.

4. Spread mashed avocado onto toasted bread.

5. Layer smoked salmon over the avocado.

6. Top with poached eggs.

7. Sprinkle furikake or seasoning and serve immediately.

Notes

Use very fresh eggs for the best poached results.

Don’t skip toasting the bread—texture is key here.

If you’re meal prepping, mash the avocado in advance with lemon to keep it from browning.
