Ingredients
3 pounds chuck roast
4 cups beef broth
2 tablespoons Worcestershire sauce

4 cloves garlic, minced
1 large onion, thinly sliced
1 teaspoon dried thyme
1 bay leaf
6 hoagie rolls
6 slices provolone cheese
Instructions
1. Sear the chuck roast in a hot skillet until browned on all sides to deepen flavor.
2. In the slow cooker, add sliced onion, minced garlic, Worcestershire sauce, soy sauce, thyme, and bay leaf.
3. Place the seared chuck roast on top and pour in beef broth until mostly covered.
4. Cover and cook on low for 8 hours or until meat shreds easily with forks.
5. Remove the roast, shred it, and strain the cooking liquid to use as au jus.
6. Toast the hoagie rolls, layer them with provolone cheese and shredded beef.
7. Serve each sandwich hot with a small bowl of warm au jus for dipping.
Notes
Always sear the beef first for a richer flavor base.
Strain the jus well before serving to avoid unwanted bits.
Add horseradish or caramelized onions for a flavor twist.
