Description

This Slow Cooker BBQ Pulled Beef is a tender, saucy, flavor-packed easy dinner made with juicy chuck roast, smoky barbecue sauce, and simple pantry seasonings. Ingredients

3 pounds chuck roast

1 1/2 cups BBQ sauce

1/2 cup beef broth

1 medium yellow onion, thinly sliced

4 cloves garlic, minced

2 tablespoons apple cider vinegar

1 tablespoon Worcestershire sauce

2 tablespoons brown sugar

2 teaspoons smoked paprika

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 1/2 teaspoons salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes, optional

1 tablespoon butter, optional

2 tablespoons chopped parsley or sliced green onions, optional for serving


Instructions

1. Pat the chuck roast dry and season it on all sides with salt, black pepper, smoked paprika, chili powder, garlic powder, and onion powder.

2. Add the sliced onion and minced garlic to the bottom of the slow cooker.

3. In a bowl, stir together the BBQ sauce, beef broth, apple cider vinegar, Worcestershire sauce, brown sugar, and red pepper flakes if using.

4. Place the seasoned beef on top of the onions, then pour the BBQ sauce mixture over the roast.

5. Cover and cook on low for 8 hours, or until the beef is very tender and shreds easily with two forks.

6. Transfer the beef to a bowl or cutting board and shred it, removing any large pieces of fat.

7. Skim excess fat from the sauce if needed, then return the shredded beef to the slow cooker.

8. Stir the beef into the sauce and add butter if using for a richer finish.

9. Let the pulled beef sit in the sauce for 10 minutes before serving on buns, potatoes, rice, tacos, or sliders.

Notes

For the most tender pulled beef, cook on low instead of high whenever possible.

Choose a BBQ sauce you love because it gives the recipe most of its final flavor.

If the sauce is too thin after cooking, simmer it uncovered for a few minutes until slightly reduced before mixing it back into the shredded beef.
