Ingredients
3 medium russet potatoes, diced
8 oz smoked sausage or kielbasa, sliced into coins
1 cup shredded sharp cheddar cheese
4 large eggs
2 green onions, chopped
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste
1/2 teaspoon red pepper flakes (optional)
Instructions
1. Dice the russet potatoes into even cubes and parboil in salted water for 5 minutes.
2. Drain and pat dry the potatoes thoroughly.
3. Heat a cast-iron skillet over medium heat and add olive oil.
4. Add potatoes and cook undisturbed until golden and crispy on one side.
