2 tablespoons all-purpose flour

2 cups vegetable broth

3 cups cooked brown or green lentils

1 cup sour cream

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped

8 ounces egg noodles, cooked


Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 4 to 5 minutes until softened.

2. Add the minced garlic and sliced mushrooms. Cook for 8 to 10 minutes, stirring occasionally, until the mushrooms release their moisture and turn golden.

3. Stir in the paprika, soy sauce, and Dijon mustard until the mushrooms are well coated.

Notes

Use brown or green lentils because they hold their shape better than red lentils in the sauce.
