Description

This Shrimp with Garlic and Coconut Milk is a quick dinner idea that brings bold flavor with minimal effort. Creamy coconut milk wraps around garlicky, tender shrimp for a comforting yet bright dish. It’s perfect for busy nights when you want something easy and satisfying. If you’re on the hunt for easy dinner recipes, seafood ideas, or creamy one-pan meals, this one is a must. Serve it with rice, pasta, or crusty bread. Great for weeknight dinners, last-minute guests, or when you’re just craving cozy food that tastes like a tropical escape.

Ingredients

1 lb raw shrimp, peeled and deveined

6 garlic cloves, minced

1 tbsp olive oil or butter

1 can (13.5 oz) full-fat coconut milk

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp red chili flakes (optional)

1 tbsp lime juice

2 tbsp chopped parsley or cilantro

Instructions

1. Heat oil or butter in a skillet over medium heat. Add garlic and sauté until fragrant and golden, about 1 minute.

2. Add the shrimp to the skillet and cook until pink, about 1-2 minutes per side. Remove and set aside.

3. Pour coconut milk into the pan and simmer for 4-5 minutes until slightly reduced.

4. Return shrimp to the skillet. Add lime juice, salt, pepper, and optional chili flakes. Simmer for 1-2 minutes more.

5. Garnish with fresh herbs and serve hot over rice, pasta, or bread.

Notes

Use full-fat canned coconut milk for the creamiest texture.

Don’t overcook the shrimp—remove them as soon as they turn pink.

Add extra lime juice at the end if you want more brightness.
