Ingredients
1 cup unsalted butter, softened
3/4 cup powdered sugar
2 large egg whites
1 teaspoon vanilla extract
1 1/4 cups cake flour
1/4 teaspoon salt
8 ounces white chocolate, chopped
2 tablespoons heavy cream
Instructions
1. Beat the softened butter and powdered sugar together until smooth and fluffy.
2. Add the egg whites gradually, then mix in the vanilla extract until fully combined.
3. Fold in the cake flour and salt just until a smooth batter forms.
4. Transfer the batter to a piping bag and pipe small even rounds or rectangles onto a parchment-lined baking sheet.
5. Bake at 350°F for 8 to 10 minutes, or until the edges are lightly golden. Cool completely.
6. Melt the white chocolate with the heavy cream, stirring until smooth and glossy.
7. Spread or pipe the white chocolate onto the flat side of half the cookies.
8. Top with the remaining cookies to make sandwich cookies.
9. Chill or rest the cookies until the filling is set, then serve.
Notes
Use room temperature butter so the batter blends smoothly and pipes evenly.
Do not overbake the cookies or they will lose their delicate crisp texture.
Let the white chocolate cool slightly before filling so it stays in place and sets neatly.
