Ingredients
1.5 pounds boneless skinless chicken thighs or chicken breasts
1 pound baby potatoes, halved or quartered
2 cups broccoli florets
2 large carrots, sliced
1 small red onion, cut into wedges
3 tablespoons olive oil
3 tablespoons Dijon mustard
2 tablespoons honey
3 cloves garlic, minced
1 tablespoon apple cider vinegar or lemon juice
1 teaspoon Italian seasoning
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the oven to 425°F and line a large rimmed baking sheet with parchment paper.
2. Add the chicken, potatoes, carrots, red onion, and broccoli to the prepared sheet pan.
3. In a small bowl, whisk together olive oil, Dijon mustard, honey, garlic, apple cider vinegar or lemon juice, Italian seasoning, paprika, salt, and black pepper.
4. Pour the honey Dijon sauce over the chicken and vegetables, then toss until everything is evenly coated.
5. Spread the chicken and vegetables into a single layer, leaving space between the pieces so they roast instead of steam.
6. Bake for 25 to 30 minutes, turning the vegetables once halfway through, until the chicken reaches 165°F and the vegetables are tender.

Notes
Cut the potatoes and carrots small enough so they cook through at the same time as the chicken.
For brighter broccoli, add it during the last 15 minutes of baking instead of at the beginning.
Use a meat thermometer to make sure the chicken reaches 165°F without overbaking.
