Ingredients

1 pound fresh asparagus, trimmed

3 tablespoons extra virgin olive oil

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

1 teaspoon Dijon mustard

1 teaspoon honey

1 small garlic clove, finely minced

1/3 cup shaved Parmesan cheese

1/4 cup toasted sliced almonds

2 tablespoons chopped fresh parsley

1 tablespoon chopped fresh mint or basil

1/4 teaspoon fine sea salt

1/8 teaspoon black pepper


Instructions

1. Rinse the asparagus and pat it completely dry. Trim away the woody ends.

2. Lay each asparagus spear flat on a cutting board and shave it into thin ribbons using a vegetable peeler.

3. Add the shaved asparagus ribbons and tender tips to a large salad bowl.

4. In a small bowl, whisk together olive oil, lemon juice, lemon zest, Dijon mustard, honey, minced garlic, salt, and black pepper.

5. Drizzle the dressing over the asparagus and toss gently until lightly coated.

6. Add Parmesan, toasted almonds, parsley, and mint or basil.

7. Toss once more, then let the salad rest for 5 minutes before serving.

8. Taste and finish with extra lemon zest, Parmesan, or black pepper if desired.

Notes

Use thicker asparagus spears because they are much easier to shave into pretty ribbons.

Keep the dressing separate until serving if you want to prep this salad ahead.

Add the almonds right before serving so they stay crunchy.
