Ingredients
2 pounds Yukon Gold potatoes
4 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 1/2 cups whole milk
1/2 cup shredded sharp cheddar cheese
1/2 cup shredded Gruyère cheese
1/4 cup grated Parmesan cheese
2 garlic cloves, minced
1/2 teaspoon ground nutmeg
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions
1. Peel and slice the potatoes into 1/8-inch thick rounds using a mandoline or sharp knife. Soak in cold water to prevent browning.
2. In a medium saucepan, melt butter over medium heat. Add flour and whisk for 1 minute to form a roux.
3. Gradually add warm milk while whisking, cooking until the mixture thickens into a smooth béchamel sauce.
4. Remove from heat and stir in most of the cheddar, Gruyère, and Parmesan cheeses, reserving some for the topping. Add garlic, nutmeg, salt, and pepper.
5. Preheat oven to 375°F (190°C). Grease a 9×13-inch ceramic baking dish.
6. Layer one-third of the potatoes in the dish, pour over one-third of the cheese sauce. Repeat two more times, ending with sauce.
7. Sprinkle the reserved cheese evenly over the top.
8. Cover with foil and bake for 45 minutes. Remove foil and continue baking for 25–30 minutes until top is golden and bubbly.
9. Let rest for 10–15 minutes before serving. Garnish with chopped parsley.
