Ingredients
20 oz cheese tortellini
1 lb ground beef
4 tbsp unsalted butter
4 garlic cloves, minced
3 cups baby spinach
1/3 cup grated Parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
Pinch red pepper flakes (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook the cheese tortellini according to package instructions, about 3-4 minutes if fresh. Drain and set aside.
2. In a large skillet over medium heat, cook the ground beef with salt and pepper until browned, about 6-8 minutes. Drain excess grease and transfer beef to a bowl.
3. In the same skillet, melt the butter and add minced garlic. Sauté for about 1 minute until fragrant.
4. Return the beef to the pan, add the cooked tortellini, and toss in the baby spinach. Stir until spinach wilts, about 2-3 minutes.
5. Add grated Parmesan and red pepper flakes (if using). Stir everything to coat evenly in the buttery garlic sauce. Serve warm.
Notes
For a creamier texture, stir in 1/4 cup heavy cream at the end.
You can swap beef for ground turkey or Italian sausage.
Frozen tortellini works well too — just boil it before combining.
