Ingredients

3 to 4 pounds chuck roast

2 tablespoons olive oil

3 large yellow onions, thinly sliced

4 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon all-purpose flour

1 cup dry white wine

3 cups unsalted beef broth

4 sprigs fresh thyme

2 bay leaves

Salt and black pepper, to taste


Instructions

1. Season the chuck roast generously with salt and pepper, then sear in a Dutch oven on all sides until well browned. Remove and set aside.

2. Add sliced onions to the pot and cook on medium-low heat, stirring regularly, until deeply caramelized — about 30 to 40 minutes.

3. Stir in minced garlic, Dijon mustard, and flour. Cook for 1 to 2 minutes, then deglaze with white wine, scraping the bottom of the pot.

4. Return the roast to the pot. Add beef broth to mostly cover the meat, along with thyme sprigs and bay leaves.

5. Cover with a tight-fitting lid and transfer to a preheated 325°F oven. Braise for 3.5 to 4 hours until fork-tender.

6. Remove roast and let it rest. Skim excess fat from the broth. Slice or shred roast and serve with onions and sauce spooned over.

Notes

Use a heavy Dutch oven for best caramelization and even braising.
