Ingredients
2 tablespoons olive oil
2 tablespoons unsalted butter
16 ounces cremini or white button mushrooms, cleaned and sliced
1 large yellow onion, thinly sliced
3 garlic cloves, minced
Salt and black pepper to taste
1 tablespoon chopped fresh parsley
Instructions
1. Wipe mushrooms clean with a damp paper towel and slice thickly.
2. Thinly slice the onion and mince the garlic.
3. Heat olive oil and butter in a large skillet over medium-high heat until the butter is foamy.
4. Add mushrooms to the pan and let them cook undisturbed for 2-3 minutes to sear.
5. Stir occasionally until mushrooms are golden brown, about 8 minutes total.
6. Add sliced onions and continue to cook until soft and caramelized, about 10 minutes.
7. Stir in the garlic and cook for 1 minute more until fragrant.
8. Season with salt and pepper, and finish with chopped parsley.
