Ingredients

6 cups Rice Chex cereal

1 cup semi-sweet chocolate chips

1 cup soft caramel candies

1 teaspoon vanilla extract

2 tablespoons heavy cream

1 1/2 cups powdered sugar

1 1/4 cups sweetened shredded coconut


Instructions

1. Preheat oven to 325°F and toast shredded coconut on a baking sheet for 5–8 minutes, stirring once until golden.

2. Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.

3. Pour melted chocolate over Rice Chex cereal in a large bowl, stirring gently to coat.

4. Add coated cereal to a zip-top bag with powdered sugar, seal, and shake until evenly coated.

5. In a small saucepan over low heat, melt caramel candies with heavy cream until smooth, then stir in vanilla.

6. Drizzle caramel over the cereal mixture, then add toasted coconut and gently toss to combine.

7. Spread out on parchment paper and allow to cool completely before storing in an airtight container.

Notes

Use rice Chex over corn Chex for a more neutral flavor that doesn’t overpower the caramel and coconut.

Always toast the coconut—unlike raw coconut, toasting adds rich, nutty depth and texture.

Don’t skip the setting time; it keeps the mix from becoming a gooey mess in storage.
