Ingredients
2 cups all-purpose flour

3/4 cup dark brown sugar
1/2 cup unsulphured molasses
1 cup buttermilk
1 large egg
1/2 cup neutral oil (like canola)
1 teaspoon vanilla extract
Instructions

5. Scoop batter into muffin cups, filling each about 3/4 full.
6. Bake for 18–20 minutes or until a toothpick inserted comes out with moist crumbs.
7. Cool for 5 minutes in the pan, then transfer to a wire rack to finish cooling.
Notes
Do not overmix the batter; it can make the muffins tough.
Use dark molasses for richer flavor—avoid blackstrap.
