Ingredients

2 firm pears, halved and cored

4 ounces goat cheese

1/3 cup walnuts, chopped

2 tablespoons maple syrup

1 tablespoon olive oil

1 teaspoon lemon juice

1 teaspoon fresh thyme leaves

1/4 teaspoon salt

1/8 teaspoon black pepper


Instructions

1. Preheat the oven to 400°F and line a small baking sheet or baking dish with parchment paper.

2. Cut the pears in half lengthwise and scoop out the cores to create a small hollow in each half.

3. Brush the cut sides of the pears with olive oil and lemon juice.

4. Arrange the pears cut side up on the prepared baking sheet.

5. Sprinkle the pears with salt, black pepper, and fresh thyme.

6. Roast for 20 to 25 minutes, or until the pears are tender but still holding their shape.

7. While the pears roast, add the chopped walnuts and maple syrup to a small saucepan over low heat.
