Ingredients
2 1/2 pounds butternut squash, peeled, seeded, and cubed
1 whole head garlic
1 tablespoon olive oil
2 tablespoons butter
1/4 cup heavy cream
3/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon fresh thyme leaves
Instructions
1. Preheat the oven to 400°F.
2. Peel the butternut squash, remove the seeds, and cut it into cubes.
3. Spread the squash on a baking sheet and drizzle with olive oil.
4. Cut the top off the garlic head, drizzle it lightly with a little olive oil, and wrap it in foil.
5. Roast the squash and garlic for 35 to 40 minutes, or until the squash is very tender and the garlic is soft.
6. Transfer the roasted squash to a large bowl or food processor.
7. Squeeze the roasted garlic cloves out of their skins and add them to the squash.
8. Add the butter, heavy cream, salt, black pepper, and fresh thyme.
9. Mash by hand or blend until smooth and creamy.
10. Taste and adjust seasoning if needed, then serve warm.
Notes
Roasting the squash instead of boiling it keeps the flavor richer and prevents a watery mash.
For an even smoother texture, blend the mash in a food processor for a few seconds after mashing.
