Ingredients
4 bone-in skin-on chicken thighs
2 large leeks
3 cups cubed butternut squash
2 tablespoons olive oil
1/2 cup chicken stock
4 sprigs fresh thyme
Salt to taste
Freshly cracked black pepper to taste
Instructions
1. Preheat oven to 400°F (200°C). Peel and cube butternut squash. Clean and thickly slice leeks. Pat chicken thighs dry.
2. Spread squash and leeks in a large ceramic roasting dish. Drizzle with olive oil and toss to coat.
3. Place chicken thighs skin side up on top of vegetables. Tuck in thyme sprigs and pour chicken stock around the edges.
4. Season everything generously with salt and freshly cracked black pepper.
5. Roast uncovered for 45–50 minutes until chicken skin is golden and crisp and vegetables are tender.
6. Optional: Broil for 2–3 minutes at the end for extra crispy skin.
7. Let rest for 5–10 minutes before serving. Spoon out chicken with a generous helping of squash and leeks, and drizzle with pan juices.
